Video Game Giveaway: Get Fit With Mel B & Just Dance!

Jen and I are both hosting this giveaway which means we have 2 items up for grabs! One from my blog and one from her's!

We are giving away Mel B Get Fit PS3 games! Who doesn't have "work out more, lose weight, tone up, and eat better" on their New Years' Resolution list? I know I do. I also know that I hate working out. Get Fit with Mel B is actually a fun and interactive way to exercise! Plus, if you're anything like me (ie: live in Florida where it's either raining or hot as you-know-what 95% of the time), you hate exercising outdoors. This game is perfection. Wedding Weekend!

Holy crap. I'm getting married TOMORROW!!!! This week has beein INSANE to say the least. Not only was I preparing for the wedding, packing for the honeymoon, trying to maintain my dignity... I decided to throw a TV crew up in the mix. If the show ever airs, I'll be sure to let you know. I've learned a lot about reality TV this week... been very interesting! Here's a quick run down of everything that went down this week -- and no, there are no pictures:

-Bachelorette Party Part Deux: We hit up the town for a night parade and bar hopped. I funneled my first beer. It ended up on my jeans and not in my stomach. We danced with drag queens and midgets. Someone clawed me in the face (I was standing in the wrong place at the wrong time). Needless to say, I'll be a bit of a Scarface as I walk down the aisle.
-I spent Sunday trying to finish my brooch bouquet, making a seating chart. I realized my bridesmaids were not carrying brooch bouquets because it was a pain in my arse. They're walking down the aisle with pinwheels.
-I had my hair and makeup trial. I looked pretty hot.
-I tanned. I'm trying to work on my Jersey Shore skin tone.
-I broke my iPhone. I rule. DAMNIT!!!
-I spent Valentine's Day having a delicious grouper sandwich at my favorite place Frenchy's. And, of course, a rum runner with 151 floater. The only way to do it!
-I did something spontaneous and crazy for Scott. This one's a secret for now.
-Today I will pick up the desserts for the table, figure out the keg situation for the reception, pack for our honeymoon, finish my brooch bouquet.... rehearsal, rehearsal dinner....
-Tomorrow is the BIG day. Let's see how it all goes down.

4. Describe your best Valentine's Day.
Last year, we went to one of my favorite restaurants (The Columbia) and had sangria and yummy food before heading to a Flogging Molly concert. Definitely one of my favorite nights. This year, he has to work... so it will be a bit different. We are planning on having a Valentine's Day lunch on the beach.

5. What has been the most romantic night of your life?
Getting engaged I suppose! We were in the Florida Keys, it was our last night on vacation, we were having dinner at this wonderful place... and everything felt right. It was amazing.

6. What's your go to date night outfit?
I love dark denim, sparkly heels, and some kind of top.

7. Where is your favorite place to go on a date?
Drinking... Ha! We love to try new beers, wines, and enjoy good food. I love the nights when we go to a new restaurant or visit a new bar.

8. Store bought Valentine's or homemade?
Either or.

9. What is your favorite love song?
I have so many. Of course, I gotta pay tribute to the fab five in *Nsync for "This I Promise You. Tears in my eyes every time! Ha! I also love the classic "At Last" by Etta James... I should include our wedding song... "I'm Yours" since I'm sure this will definitely bring back wonderful memories.

10. If you had to pick a date for Valentine's who would it be?
My husband to be...in just 5 days!

I {LOVE} to blog because...



I'm not sure.

It passes the time. I like to talk about myself. I like to share my stories with other similar minded individuals. I like to have a way to look back on what happened, how I felt, and to share pictures.

I will say it has been an amazing year of blogging reading about everyone's successes and relating to people I never would have had the chance to meet otherwise. :)

{All you need is love...} Day 5



What I {LOVE} about my friends is...

Their spontaneity: One minute we are shopping -- the next we are doing shots. I like to have friends that are down for whatever, ask questions later, and enjoy having a good time.


Started out at a concert ... ended up trying to stalk Lil Jon. Success!



They like to listen: I like to talk. It's important to have friends who listen and give a damn.


They understand our schedules kind of suck: We all work weird hours and have trouble (sometimes) meeting up. We are low maintenance enough to realize and figure that out.


They like to drink: Let's be real. Now that I work full time, Happy Hours are the only things that I'm energized enough to do! I don't have wild nights on the weekends anymore, but I do enjoy getting together for a glass of wine or cocktail after hours.



They like to be silly: Again, a necessity if you know me! I'm not a serious person by any means. I like to do random things at random times with random people. I love comedy shows, terrible concerts, and dirty beach bars.

And, last but not least, we try to never take ourselves too seriously.

We just enjoy the ride!

{All you need is love...} Days 3 & 4



If I could travel anywhere this snowy February, to cheer myself up I {LOVE} to go ...

Well, it's not exactly snowy here... but it hasn't been the most pleasant of weather either! I'm eyeing this 10 day forecast... Our wedding day is predicted to be 71 and sunny.. I'm praying!

I'd love to travel to where I'm going next week! Mexico, Belize, Honduras... I just the sand and sun please!



Ideally one day I'd like to visit Amsterdam, England, Italy, and Germany. However, those are definitely more of dreams and less of plans. :)

For Valentine's Day I {LOVE} to bake/cook...
Hmm... I can't remember ever cooking something specifically for Valentine's Day. If I had to, here's what I'd whip up:


Pink Champagne Cake

  • 2 3/4 cups sifted flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2/3 cup shortening
  • 1 1/2 cups granulated sugar
  • 3/4 cup Champagne
  • 6 egg whites

Coconut Filling:
  • 1/4 cup butter
  • 16 large marshmallows, quartered
  • 1 tablespoon white wine
  • 1 cup flaked coconut

Fondant Frosting:
  • 1 pound confectioners' sugar
  • 1/4 cup light corn syrup
  • 1/4 cup water
  • 1 1/2 teaspoons vanilla extract
  • Dash of salt
  • Few drops almond extract
  • 2 to 3 drops red food color (optional)
  • 6 large marshmallows, quartered

Heat oven to 350 degrees F. Grease and flour two 9-inch layer cake pans.

Sift flour again with baking powder and salt. Cream shortening with 1 cup sugar until light and fluffy. Blend in flour mixture and Champagne alternately, mixing until smooth. Beat egg whites until stiff. Gradually beat in remaining 1/2 cup sugar, continuing to beat to stiff meringue. Fold about half of meringue into batter, mixing thoroughly with whisk. Gently fold in remaining meringue. Turn into 2 greased and floured 9-inch layer cake pans. Bake until a wooden pick inserted in center comes out clean, 25 to 30 minutes. Cool in pan 10 minutes, then turn out onto wire racks to cool.

While cake is baking, melt butter, marshmallows and wine in top of double boiler over boiling water. Remove from heat and stir in coconut. Cool until thick enough to spread. Sift confectioners' sugar into top of double boiler. Add corn syrup and water. Stir over boiling water until smooth. Blend in vanilla extract, salt and almond extract. Stir in food color. Keep frosting warm while using so it will spread.

When cake layers are cool, spread top of 1 with Coconut Filling and stack second on top. Spread 2/3 cup Fondant Frosting thinly and smoothly over top and sides of cake, sealing any crumbs. Pour about 1/2 cup additional frosting over top of cake and spread quickly to smooth. Cover sides of cake with remaining frosting. Dip marshmallow quarters in remaining frosting to coat both sides and set randomly over top and sides of cake.

Makes 1 (2-layer, 9-inch) cake or 10 to 12 servings.

*Have a glass of wine or a Mich Ultra (I only drink my girly beers when I'm alone! My guy drinks different things)

*Play with the dogs
*Get my nails done
*Cook (I, for some reason, cook more on nights when I'm home alone than when we are both home together)


My alone time is few and far between -- I feel as if I'm always on the go!

Playing Catch Up

When you're down to 15 days before your wedding, you start to panic a bit. I found this book in the Barnes & Noble when taking a coffee break at work.


How appropriate. Let's break down the tag line (If you can't read it, it says: "What to do when place cards, plus ones, and paying two grand for a cake make you miserable").

Place Cards: Totally an issue. He didn't want a seating chart. I did. Sigh.
Plus 1's: We did not give plus one's if you were not dating anyone seriously. We were trying to keep the guest list down and the catering budget small.
Cake: Yea... I totally skipped real wedding bakers on this one. I'm raiding Publix and this cupcake bakery to get some treats for our dessert table. Nothing too crazy!

Anyway, things are moving along very quickly... I barely have time to catch my breath!

To Do:
  1. Marriage License (Clearly this is important!)
  2. Hair Trial
  3. Order desserts
  4. Order the kegs
  5. Tie up all the loose ends with vendors (final rsvp count for caterer, etc.)
  6. Rings cleaned
  7. Get packed and ready for the honeymoon cruise!
Wow, is that all I have to do? I met with the planner and photographer yesterday and things are fantastic. I can't wait to share all the details with everyone!

Top 2 things you've learned about friendship

This is pretty much a super appropriate topic this week. Getting married brings out old friends, connections with new girls over engagements and wedding details (courtesy of websites like The Knot, Wedding Bee, etc.), and realizations as to who is there for you when you get ready for your big day. Not to get all Bridezilla on you, but celebrations and special occasions really do make light of the people in your life and how much you mean to them. It's not about birthday gifts or tagging along to all a bride's appointments -- it's about effort and time.

01. I love having a variety of people that I'm lucky enough to call friends. I have shopping pals, happy hour chicas, guy friends, my best girls, and yes, even some blogging buddies. I love that I can randomly text someone from middle school and meet up for drinks (when we haven't hung out in years!). I love how I can call my best male friend at pretty much any time just to gossip or talk about the next drinking adventure. I love friends who make it seem like no time has passed -- even if its been days, weeks or even years -- since our last phone call or hang out! The best friends are the ones who know no bounds -- the ones who are consistently there for you when you need (and in return, you are always there for them when needed).

02. The best friends might not even be in the same town (or even state!) but a five minute Google chat (Yes, I'm talking to you Holly!) is all that you need sometimes. I feel like we are all at the point in our lives when things are changing -- some are in graduate school, some are getting married, some are having babies -- but our friendships should evolve and not necessarily change in a negative way. Our differences might become apparent in hard times, but what makes us "friends" should never be forgotten.


*I do have to point out the irony of this blog entry is that very few of my "in real friends" read my blog! =) Ha!*
